France’s Fourteen Most Sustainable Restaurants Recognised
Plant-based restaurants, neighbourhood canteens, sustainable meat: on Monday evening in Paris, Écotable presented its annual awards, shining a light on the most environmentally responsible establishments within its sustainable dining network.
Although the restaurant industry is facing a challenging period, many of its professionals continue to take meaningful action on environmental and sustainability issues. To support them, Fanny Giansetto and Camille Delamar founded Écotable seven years ago. The Social and Solidarity Economy organisation went on to create France’s first sustainable restaurant certification. To date, 295 restaurants have received between one and three Écotable macarons.
For the past three years, Écotable has organised an annual awards programme to highlight the commitment of these restaurants. The awards cover several sectors, from commercial dining and institutional catering to caterers and bakeries and pastry shops.
The rankings are based on the results of the organisation’s annual sustainability audit. The assessment uses a questionnaire covering more than 150 criteria, completed by the restaurant owner, as well as an analysis of monthly purchasing invoices, menus, water consumption and other operational data.
This year, 14 awards were presented, including four new categories: neighbourhood canteen, catering, sustainable meat, and sustainable drinks menu.
Among this year’s winners are Parisian fine-dining restaurant Vivide, which Le Figaro has featured and praised several times, as well as Nicolas Conraux’s hotel La Butte in Plouider and Maslow Group, the group behind the Parisian restaurants Maslow and Fellows.
