In Paris, there are still Italian restaurants capable of surprising us. Here are a few that seduced us with their authenticity and creativity.

Pasta Madness at Fellows
We loved Maslow, the first address of the eponymous group, which is committed to promoting sexy, veggie cuisine. Now they’re at it again with brio at Fellows, in a completely different register: that of pasta. Chef and co-founder Mehdi Favri, brimming with creativity and inventiveness, tackles these totems of Italian gastronomy, revisiting them with a bevy of original, super gourmet and truly affordable vegetarian recipes. In this new urban spot, which is stirring up the already lively rue du Faubourg Saint-Denis even more, you’ll find your fork twirling in dishes of pasta (homemade) that are absolutely crazy. Mafaldine harissa, pappardelle with mushroom ragout, fettucine with hen’s egg bottarga, skyr and miso agnolotti and our ultimate favorite: pici (large spaghetti) topped with a butter sauce and smoked cheese emulsion. The whole thing was enlivened by a few mustard seed pickles and a few chervil leaves that weren’t just there for decoration: we dare say this is probably the best pasta we’ve had in a while.
