Here’s our selection of the best Italian pasta restaurants in Paris. A hearty dossier to enjoy al dente.

In the Italian folder family, after the pizza, we ask for the pasta de la mamma. Yes, in this selection of the best pasta restaurants in Paris, we’re only going to be talking about addresses in Italy. No ramen here.

There’s no need to tell us that Marco Polo brought the recipe back from Asia in 1296, during his expedition along the Silk Road. The reality, as always, is more complex. True, a millet noodle dish dating back over 4,000 years was discovered in China in 2005. But the oldest known recipe book (a Mesopotamian culinary treatise from 1700 BC) also attests to pasta concocted with wheat flour and water, crumbled in a boiling liquid.

Dry pasta, on the other hand, is said to have been invented by the Arabs (more practical in desert countries), and introduced to Italy when they landed in Sicily in the 9th century. They are also likely to have brought them to China, when they colonized part of the Middle Kingdom – traces of this heritage can be found in laghman, the Uyghur pasta of the Muslim Chinese.

In short, “it’s complicated”. But don’t let that stop you from enjoying it. And don’t forget: pasta can be eaten either al dente or overcooked!
